Mmm Cookies

So I am a sucker for chocolate chip cookies...my all time favorite!  As I was browsing Pinterest last week I came across this photo of a tower of beautiful chocolate chip cookies and pinned it to my board of Sweet Treats.
Today I had the opportunity to try out this recipe, though I was just a bit nervous because you never know what might happen while baking at altitude.
Whenever I make a recipe for the first time I always follow it step by step in detail.  The recipe is from the blog kelseysappleaday.blogspot.com and she said she had adapted it just slightly from Anna Olson, Food Network Canada.  Here is the recipe she posted:
Best-Ever Chocolate Chip Cookies

Ingredients:

3/4 c. unsalted butter, softened
3/4 c. brown sugar
1/4 c. granulated sugar
1 egg
2 tsp. vanilla extract


2 c. all purpose flour
2 tsp. cornstarch
1 tsp. baking soda
1/2 tsp. salt
1 c. semi-sweet chocolate chips

Directions:

1. Preheat oven to 350 degrees F.
2. In the bowl of a stand mixer fitted with a paddle attachment, cream together butter and sugars until fluffy and light in color. Add egg and vanilla and blend in.
3. Mix in flour, cornstarch, baking soda and salt. Stir in chocolate chunks.
4. Using a standard-sized cookie scoop or tablespoon, drop dough onto a prepared baking sheet. Bake for 8-10 minutes, until barely golden brown around the edges. (The tops will not brown, but do NOT cook longer than ten minutes.)
5. Let cool, on the sheet, on a wire rack for five minutes. Remove from baking sheet and let cool completely.

Like I said, baking at altitude can often be difficult and I had no idea what to expect.  I typically make the recipe on the back of the Nestle Toll House bag and I can tell you that there is usually inconsistency in the batches that I make, though I don't know why.  But I was definitely happy with the outcome of this recipe.

My cookies turned out perfect!  I followed Kelsey's instructions to not leave in the oven for more than 10 minutes.  They came out beautiful, round and fluffy, just like her photo.  This is the kind of cookie I enjoy most, one that it a bit cake like.  These cookies are delicious and not too sweet.  I couldn't resist tasting one only 5 minutes out of the oven.  I definitely will be holding on to this recipe and making these more often.  I think they would also be good with other added ingredients like nuts, or toffee chips...maybe on the next batch.
